Gluten and dairy free sundae!
I have always loved ice cream. This sundae is delicious! I use:
- Breyers lactose free vanilla ice cream
- Ah!Laska chocolate syrup
- “Let’s do… gluten free sugar cones”

Because I find eating a cone a little tedious, I just crush the cone on top and put it all in a bowl. Enjoy!

Gluten free/ dairy free chocolate dipped pretzels!
Here’s my recipe for chocolate dipped pretzels:

In a double boiler (a pan with simmering water and a bowl over the top with the ingredients in it.), slowly melt about 3/4 of a 10 oz bag of dairy free chocolate chips and two tbs butter. I use “semi sweet chocolate dream baking chips”. If needed, add vanilla almond milk until it is shiny and easy to dip in. Dip “Glutino” salted pretzels into the chocolate and put into the freezer until frozen. Keep them in the freezer all the time, unless they are being served, of course. That’s it, so simple!

CRAVE bake shop!

Finally, a gluten free bakery in Lake Oswego! Crave Bake Shop opened earlier this summer in downtown LO. Every single treat they serve there is gluten free, and some are dairy free, it is so great! They have many different options of desserts and breakfast pastries including cupcakes, cinnamon rolls, scones, cookies, ice cream sandwiches, and even desserts like ring dings, (shown above, a spin off of “ho ho’s” manufactured by hostess). Crave is also a great place to order a wedding cake, birthday cake, or any other special order for an event. :) They have a menu that changes every day, so be sure to check out their facebook page to see what treats they are selling each day. Crave has daily cupcake flavors: Hot chocolate (chocolate cake with toasted marshmallow creme), birthday cake (vanilla bean cake with vanilla buttercream and rainbow sprinkles), and black and white (chocolate cake topped with vanilla Italian meringue buttercream). All are great, but my personal favorite treat is the coconut ice cream sandwich. The ice cream sandwiches are only served on Saturdays, and they are not served every Saturday so be sure to grab one if you can! Homemade dairy free coconut ice cream on two chocolate cookies……. can it get any better? If you are ever in town, be sure to stop by Crave Bake Shop!

Gluten free/dairy free pasta dish!
Hello all. Sorry its been a while. Here is my pasta dish! This is a great family dinner recipe and could be great for leftovers or school lunches. The recipe is below!
Veggie and Pasta Marinara
Ingredients:
-1 package of gluten free quinoa spaghetti
-Your favorite jarred pasta sauce (i used newman’s own marinara)
-green bell pepper*
-yellow onion*
-extra virgin olive oil
-salt and pepper, if desired
-gluten free apple and basil sausage (can be found at New Seasons meat counter or most likely in your grocery store’s deli meat section, wherever the sausage is at your store)

Cook the pasta. Sautee the veggies in the oil in one pan, and cook the sausage in another. Add the cooked sausage and jar of pasta sauce to the sauteed veggies and warm the sauce through. Pour the sauce over pasta. So easy and yummy!


*These are just the veggies i used. You can use any veggies you like such as:
-brocolli
-carrots
-zucchini 
-asparagus
-brussel sprouts
-mushrooms

SUPER NACHOS!
Tonight we made super nachos! This is a delicious meal that is very easy to make. Just spread tortilla chips onto a greased baking sheet, add all the GF toppings you like, and throw ‘em in the oven until they are nice and melted! I used dairy free mozzarella cheese, taco meat, and diced peppers/onions. Heres the recipe for the taco meat, we have used it time and time again for our tacos and it is delicious! Once you have all the bottles of spices on hand, its super quick to whip up. The recipe is from my friend Heidi Golden. Thanks so much Heidi!
Taco Seasoning
In a bowl combine:
1 tbsp chili powder
2 tsp onion powder
1 tsp cumin
1 tsp garlic powder
1 tsp paprika
1 tsp oregano
1 tsp sugar
1/2 tsp salt
Add this mixture to 1 pound of browned ground beef with 1 cup of water. Stir and bring to a boil. Reduce to a simmer for 5 minutes.
Enjoy!!!

PANINIS!

Tonight for dinner me and my friend Beka made paninis! If you don’t have a panini maker, you should DEFINITELY invest in one. Over time, it will be one of your most valuable kitchen appliance, second only to your toaster. The “Breville Panini Duo” is the one we have and is great. Because it is non-stick, NOTHING sticks to the top or bottom, making for an easy clean up. Paninis are great for easy, on the fly dinners. You can make them simple, or dress them up! You can butter the sides of the bread like I do, or just keep it plain and low fat. Tonight my panini was on Udi’s white sandwich bread with ham and daiya dairy free mozzarella. (I am dairy free as well.) Some other paninis we have tried and loved are:

-Gouda and blackberry jam

-Ham, bacon, and sauteed bell peppers and onions

-apples and peanut butter on raisin bread (still experimenting with this one, I’ll blog when I get it to work and taste right) :).

Go pick up a panini maker, you are sure to enjoy the results!!

Subway.
The iconic sandwich place.
You see ‘em off every exit, you went when you were little, maybe that was your “after church lunch spot”. For me, I remember going as a kid, until I become GF.
About two weeks ago I heard that subway had gluten free sandwiches.
My first thoughts were…. “what about cross contamination of knives and cutting boards? Are the toasters covered in crumbs? What is in the meat? What sauces can I use? Is there wheat in the oil and vinegar?” and more.
Until I got there. When I walked in, I noticed a sheet that listed all the ingredients and meats that were gluten free. Awesome!
I ordered my sandwich, still feeling skeptical about cross contamination.
Then, the gal making my sandwich proceeded to immediately wash her hands and put fresh gloves on. She unwrapped the bun from cellophane and unwrapped the knife from cellophane and cut the bun in half. Then she toasted the bread. (if you are GF and don’t toast your bread, you need to try! It tastes so much better and doesn’t fall apart as easily. Don’t toast for too long, just until it’s a little crispy.) 
She then put the meat on my sandwich and toasted it again, all while being extra cautious with the bread. When my sandwich was done being prepared, I grabbed one of their gluten free brownies to try.
When I got home, I started to eat. It was delicious!!!!! I was actually scared that it wasn’t gluten free.
 It was THAT GOOD.
 And the brownie is the best brownie ever. All in all, this is a great gluten free place, and everyone should check it out!!

Here we go!

Why hello people. Welcome to my new blog, GLUTEN FREE 503! This is going to be a place for all you gluten free people to read about my GF findings in portland. Im going write and post pictures whenever I do or find something awesome that is gluten free. Come check it out every once and a while, its going to be SWEET!
